Now red onions are also a great choice if you want to add a mildly spicy, yet sweet flavor to your dish. My only beef with using red onions is the color. Sometimes when cooking with red onions their color gets muddy looking.
It’s just not the most appetizing color especially if you will be using green bell peppers. But remember this is an aesthetic issue, not a flavor one.

Onions I Don’t Recommend For Fajitas
A lot of onions can be used for fajitas. The ones above are my top three but even a sweet onion like a Walla Walla will work. But there are a few that I don’t recommend using when making fajitas.
- Green Onions or Scallions
- Spring Onions
- Cipollini Onion
I want to say that shallots are wonderful little onions with a hint of garlic. They are pretty small compared to other onions and much sweeter. If you want them in your fajitas, then I would recommend blending them with another onion, like a yellow or white one.
Cutting Onions for Fajitas
To cut onions for fajitas, start by cutting off the top and bottom of the onion and peeling away the outer layer.
Cut the onion in half from top to bottom. Lay one half flat on your chopping board and cut off the stem and the root of the onion.
Next, make lengthwise cuts by slicing the onion from top to bottom, without cutting all the way through the root end.
Then, make horizontal cuts across the onion, again without cutting all the way through the root end. Finally, slice the onion crosswise to create small, uniform pieces.
If you prefer larger pieces of onion in your fajitas, you can skip the horizontal cuts and simply slice the onion crosswise into thicker pieces.
You just don’t want diced, and chopped onions. You are looking for those little crescent moon shapes!
